Back by popular demand - my What's Cookin' feature! I guess everyone wants to know the answer to that 'burning' question and since I'm a big believer in giving the people what they want, here goes:
As I always do (even lo these many months when I haven't posted them here) I plan our meals in advance for the upcoming week.
Lemon pasta, chicken & broccoli "stirfry."
Beef Parmesan sandwiches, home fries & salad
Homemade macaroni & cheese & oven roasted broccoli, cauliflower, carrots & zucchini
Beef & broccoli with sesame udon noodles
Bacon, egg & cheese bagel sandwiches & yogurt parfaits w/ strawberries & granola
Kielbasa, macaroni & cheese & coleslaw
Hash brown skillet with crabmeat, poached eggs & hollandaise sauce, fruit salad and orange juice
Flounder w/ white wine & shallots, brown rice pilaf & sautéed green beans & cauliflower
I'll try to keep up with this, since I've heard from so many friends and family that they really miss reading these. I hate the thought of disappointing!
It's so funny - I hear from so many people that they missed my What's Cookin' so I've felt compelled to reprise it. We'll see if I can keep up with it!
My plan for cooking for two? I don't. I cook for three. I do not plan to cook for three but invariably there is exactly enough leftovers from any given meal for one more adult. Close but no cookie.
It really has been an adjustment now that I'm no longer cooking to accommodate the daycare kiddos too. I could always use up a little of this and a little of that for them. Now there's always a potential potluck dinner in the fridge. I guess that's why lunch was invented - right? I'll pass along any cooking for two revelations should they occur.
Red beans and rice sounds ever so yummy! I've never had the pleasure. I'll have to give it a try one of these days.

It feels good to be back. Hopefully I'll be able to keep up a fairly regular posting schedule. It's on my to-do list, so I HAVE to do it...
