I've been looking at low-carb dessert recipes to make for relatives who are on the Atkins Diet.
God bless these sturdy souls! I would totally give up desserts altogether if these were my only options...
Ok, for the record...I am not at the weight I want to be. If I could lose ten pounds I'd feel much better about my body, and twenty, I'd...well, I should stay in the realm of the possible...
It certainly isn't for lack of conscientious eating. Although I've gained a reputation as one of the bakers of the family, I very rarely eat more than a bite of the desserts I make (you know, strictly for quality control purposes...). Not that I don't love desserts, but they are something I don't feel deprived of if I don't indulge. It makes that conscientious eating I mentioned a little easier.

Were it bread or pasta (or my beloved fruits and veggies) that were severely limited in my diet, however, I think I'd just surrender to the reality of weighing more than I wanted. I don't mean to be insensitive to those who
need this diet for medical reasons...more will power to them! I wish them success in regaining and sustaining their health!
I'm just saying that for me...well, it goes against everything I thought I knew about nutrition. Besides that, it goes against
what I want and like to eat.
Though I am definitely a carnivore, I don't enjoy eating
mostly meat. What I crave is
variety! I've got to have my complex carbohydrates... give me a choice and I'll pick whole grain every time! Vegetables...the more the merrier! Fruits are my friend as well. When I have milk it's 1%...I splurge with half and half in my coffee. I like cheese just fine, but consider it a component of a meal...hardly the main event!
I guess all this should make me feel fortunate that I have choices in what I can eat. I'm glad that I've only
vanity weight to lose. I've not given up on the "eating less and exercising more" philosophy for myself. Those ten (or twenty) pounds represent the extent to which my perfect life and actual life don't align. I guess it could be worse...
Yeah...I could be looking at a future without bread!
Although I love dessert, I can certainly live without it. I do love to bake, so what that adds up to is finding victims to foist the product on.
